Japanese cuisine typically revolves around rice, the number one staple food in Japan. Almost all dishes will have rice mixed in with or alongside other side dishes, containing seafood, vegetables, meat, and soy products such as tofu. The most popular dishes are categorized into rice dishes, noodle dishes, hot pot dishes, and other dishes.

Rice dishes:
Sushi/Sashimi
      The most popular dishes in Japanese cuisine, Sushi is raw seafood (cooked seafood is also used sometimes) on top of vinegared rice, or rolled together with the rice using dried seaweed called nori, while Sashimi is simply the seafood served by itself or with a bowl of vinegared rice. Both are served with soy sauce and wasabiJapanese horseradish
.

Donburi
      Donburi consists of meat, vegetables, and/or fish on top of steamed rice. Popular dishes include Gyu Don (beef, onions), Oyako Don (chicken, egg, onions), Katsu Don (deep fried breaded pork cutlet, egg, onions), Tekka Don (raw tuna), Unagi Don (grilled eel), and Ten Don (tempura).

Curry Rice
      Rice with a unique Japanese curry that is slightly sweeter than Indian curry. The curry includes potatoes, carrots, onions, and a type of meat: beef, chicken, or pork. Can be mild or spicy.


Katsu
      In Japanese, Katsu stands for a deep fried cutlet of meat. The most popular type is Tonkatsu (pork cutlet), but Chicken Katsu and Beef Katsu can be found in restaurants as well. It is accompanied by rice, cabbage, and katsu sauce Japanese sauce similar to Worcestershire sauce

Omelet Rice (Omurice)
      A Japanese fusion cuisine of the Western omelet and Chinese fried rice, Omurice is fried rice (usually chicken) wrapped inside a fried egg like an omelet, and served with ketchup on top.

Teriyaki
      Teriyaki is fish grilled with teriyaki sauce, which has a slightly sweet flavor to it. However, in America, meat is often used instead of fish, so you will mostly likely find dishes such as Chicken Teriyaki and Beef Teriyaki.



Noodle dishes:

Ramen
      Ramen is Chinese style noodles prepared in meat-based soup with various toppings such as egg, narutoA type of fish cake, essentially a sausage made of fish
, chashuChinese barbeque flavored sliced pork
, dried seaweed, green onions, and bamboo. The noodles are slightly harder than most noodles found in Asia.


Soba
      Soba is Japanese noodles made of buckwheat. It can be served cold (without soup) or hot (with soup). The noodles are dipped in a special sauce called tsuyu, which is like sweetened soy sauce.


Udon
      Udon noodles are thicker than noodles in ramen and soba, and is usually served with hot soup, though it can be eaten cold similar to cold soba. When served with soup, tempura and deep fried tofu are usually added.

Yakisoba
      Though it contains the word soba in it, Yakisoba noodles are not made of buckwheat like soba noodles. The noodles are similar to ramen noodles and fried alongside chunks of pork and cabbage. It is essentially a Japanese version of the Chinese fried noodles dish: Chow Mein. The main difference is the use of Yakisoba sauce, a sweetened version of Worcestershire sauce, as the flavoring.



Hot Pot dishes:

Shabu Shabu
      This dish is a Japanese variant of a hot potUsing a metal pot at the center of the dining table to cook while you eat. Popular for cold days. Ingredients such as thinly sliced beef, tofu, mushroom, and vegetables are cooked one by one in a metal pot and dipped in ponzu sauceCitrus-based Japanese sauce
and/or sesame sauce once they're ready to be eaten. The broth to cook the ingredients is less sweet than the broth for Sukiyaki.


Sukiyaki
      Sukiyaki is another Japanese variant of a hot potUsing a metal pot at the center of the dining table to cook while you eat. Popular for cold days. The ingredients are mostly same as those of Shabu Shabu, but they are cooked together instead of one by one. The broth is also sweeter than that of Shabu Shabu. Once ready, the ingredients are dipped in raw egg instead of a dipping sauce. Rice may or may not accompany the meal.

Chicken Karaage
      Chicken deep fried in oil, a delicious appetizer found in many restaurants.

Japanese Croquette
     
Meat, seafood, or vegetables mixed with potatoes, and then deep-fried. Similar to Katsu, it is served with shredded cabbage and katsu sauce Japanese sauce similar to Worcestershire sauce




Okonomiyaki
      Somewhere in between a pizza and a pancake, this Japanese dish uses various ingredients such as meat, seafood, and vegetables as toppings and/or a part of the dough. The top is covered with okonomiyaki sauce Japanese sauce similar to Worcestershire sauce
, mayonnaise, aonoriSeaweed flakes to be sprinkled

, and dried bonito flakesBonito is a type of fish similar to a mackarel

.

Takoyaki
      Takoyaki is a ball-shaped pancake that contains diced octopus inside. It is topped with takoyaki sauce Japanese sauce similar to Worcestershire sauce
, mayonnaise, aonoriSeaweed flakes to be sprinkled

, and dried bonito flakesBonito is a type of fish similar to a mackarel

.

Tempura
      One of Japan's most famous dishes internationally, Tempura is deep fried seafood and vegetables, such as shrimp (most common), squid, scallop, crab, bell pepper, squash, eggplant, sweet potato, green beans, and pumpkins.

Yakiniku
      Yakiniku can be thought of as a Japanese barbecue. Meat (usually beef) and vegetables are grilled on the spot and eaten by dipping them in a sweetened, soy sauce flavored dipping sauce, accompanied by rice.
